What the hell is up with the order of dala? and are they all like sho pi & nakor?

I think they are "the sheild of the weak" or something like that, I kinda picture them as shaolin monks kinda.

Basically they worship the Goddess Dala, whom is the patron god of the disinfranchised, poor, sick, and those generally down on their luck.

Now, the whole order is not like the monks. They have priests and priestesses who act in a more centralised way to spread the faith, as it were. Monks of Dala travel from village to village, town to town, city to city, offering aid to those in need.

Also, Nakor and Sho Pi aren't monks of Dala.

One could call Nakor the Avatar of Wodar-Hospur, dead god of knowledge, and Sho pi is his apprentice.

Note that taking Nakor as the standard of anything is ludicrus.  The character ranges from certifiably nuts to absolutely brilliant, hitting every extreme along the way.
As far as Sho Pi...

remember that he was very unsuccessful as a monk and was removed from the Order, but he was reported to be one hell of a fighter within the Order of Dala.

I'm not sure that Sho-Pi was "removed" from the Order. He was sent out to find his master, I never really got the impression he was banished or kicked out. I think it was more a personal decision to forego the life of a monk in search of his "master"

Didn't the Head of his particular temple say something to the effect that he likes bashing heads a wee bit too much?  I don't have my copy of SoaDQ handy, its sitting about 200 km away at the moment(bloody lack of college storage space), so I can't look it up for sure.  If nothing else, I'll remember to bring it back with me and post something here to the effect.
